After achieving consecutive ‘grand champion’ rankings, Adriana Gonzalez Adriana and her husband, Francisco, were early adopters of a unique processing approach, sometimes referred to as ’salmuera’, that has since become more commonly employed by other producers in southern Huila. This extra step involves soaking their freshly harvested pink bourbon cherries in a 2% saltwater solution for 24 hours before the coffee is pulped. The purpose of this saltwater or ‘salmuera' soak is to reduce the presence of bacteria that might contribute to off-flavors, while creating a friendly environment for desirable (salt-tolerant) bacteria of the Lactobacillus genus. The result is the exceptionally clean, sweet, and vibrant qualities that have defined our favorite coffees from Adriana in years past.
