Released alongside a washed process lot from the 2025 harvest at La Carolina in Pichincha, Ecuador, this honey processed sidra variety separation from producer Fausto Romo exemplifies why sidra has become synonymous with specialty coffees from Ecuador. Featuring a notably fruitier flavor profile compared to its washed-process counterpart, we taste fresh raspberry and lychee in the cup as well as tangy green apple, caramel, and subtle watermelon in the finish.

Fausto Romo Sidra Honey 2025

While honey process coffee is most commonly associated with Costa Rica, it seems to be an increasingly prevalent approach in Ecuador as well. In contrast to a wet processed coffee, where some combination of fermentation and washing is employed to break down and ultimately remove the sugary mucilage that remains on the surface of coffee seeds after the fruit has been removed, honey processed coffee is dried immediately after pulping, with some amount of the mucilage left to dry on the coffee seeds.
