Released alongside a honey processed lot from the 2025 harvest at La Carolina in Pichincha, Ecuador, this washed processed sidra variety separation from producer Fausto Romo exemplifies why sidra has become synonymous with specialty coffees from Ecuador. In the cup we taste vibrant white grape, subtle florals, and an integrated panela-like sweetness, followed by a finish of soft pome fruit reminiscent of pear and yellow apple.

Fausto Romo Sidra 2025

Originally focused on dairy production after acquiring his farm, La Carolina, producer Fausto Romo was inspired by an uncle to shift his attention to cultivating unique coffee varieties. One variety in particular, called sidra, was being grown at a nearby experimental plot run by Nestlé before Fausto adopted it to be a main fixture of his farm. In 2023, a washed process sidra entry from his farm was awarded 14th place overall in the Ecuador Cup of Excellence competition.
