Notes of Orange, Dried Fruit, Raw Honey
This anaerobic honey process lot is made up of small harvests from producers who live on or around Ninga Hill and deliver their cherry to the eponymously titled Ninga Washing Station for processing. In the cup, we find an abundance of dried stone fruits, an orange-like acidity, and a creamy body that invokes the sweetness of raw honey, buttery shortbread, and subtle baking spices.

Ninga Anaerobic Honey Process 2024
Before drying, cherries delivered to Ninga Washing Station for this lot were pulped and then fermented in sealed plastic “jacky bins” under the care of meticulous washing station manager, Agathon Ininahazwe. Ninga station has been the source of many outstanding honey process lots from the Long Miles Project over the years, and we are delighted to present yet another as part of our Reserve Lot menu.
