Ratnagiri Carbonic Washed 2024

The 'Carbonic Washed' process featured with this lot begins with cherries that are precisely harvested based on brix sugar content measurements before being sorted, pulped, and then fermented in flushed stainless steel tanks for an astonishing 92 hours. Once fermentation has broken down the remaining mucilage from the seed coat, they are then given a final fresh water soak and subsequently dried on raised beds.
